I tried many cakes finally I got this from padhu's kitchen. I do tried few eggless baking recipes from my own which will launched soon . But i wanted to try a a basic eggless vanilla sponge cake too.
This cake turned out super soft and moist. I wanted to bake it in a loaf pan, but ended up baking in a round spring foam pan only. I didn't added dry fruits like walnut or cashew to the cake. You can skip add that and bake a special cake too.

How to make Egg less Vanilla cake with oil and curd
Ingredients needed
All purpose flour/Maida - 1 1/2 cup
Thick curd - 1 cup
Sugar -3/4 cup (1 cup if you want it very sweet)
Baking Powder - 1 1/2 tsp
Baking soda - 1/2 tsp
Cooking Oil or Ghee - 1/2 cup (any flavourless oil)
Vanilla essence -11/2 tsp
Preparation
Seive maida 3 times and keep it aside.
Pre heat the oven for 180 degrees C 10 minutes.
Grease and flour the baking tray and keep it ready.(I used an 8 inch square baking tray).
Method
Beat sugar with curd until sugar dissolves.
Now add baking powder and baking soda to the above and mix well. Leave it for 5 minutes.You will see bubbles appearing.
Add oil, vanilla essence and mix well.
Then add maida little by little and combine well with the wet ingredients.Mix well until creamy.
Pour the mixture in the greased baking tray and bake in a preheated oven for 30-40 minutes (180 degree C ) or until a toothprick inserted in the center of the cake comes out clean.
Remove and put it rack for 1 hour..
Note:-
- Never allow the batter to sit for a long time as this will make the cake hard.
- 3/4 th cup of sugar is normally perfect but i prefer to have little extra and so you can make it as 1 cup also.
- Curd should be in room temperature
- Insert toothpick in middle of the cake to check whether it is done
